As you may have heard, there’s a highly anticipated ramen shop coming to Oakland. Our good friends Sam, Rayneil and JJ are the masterminds behind Ramen Shop (that’s right!), opening in Rockridge. The opening is still a few months away, and they are hard at work on their space (formerly the Japanese restaurant Tachibana), and of course, the menu and bar.
One of the most exciting aspects of the Ramen Shop is their noodle machine. They actually imported a monster noodle-making machine (called “Richmen”) from Japan, weighing in at about 500lbs. After several months of waiting for the shipment, the Richmen is finally here! JJ, who trained at a ramen-ya in Hokkaido for a few months, has been working tirelessly to come up with a sure-shot recipe for their noodles. But perfection takes time — it’s been one test after the next…
We’ll be lugging the actual machine here to Umami Mart for noodle test #6 (actually the sixth time JJ will be testing the machine, and his noodles). So come out and watch the Ramen Shop gang make noodles with the machine!

Ramen noodle-making demonstration. Un-cooked noodles will be for sale. We will not be cooking noodles or making bowls of ramen at the event.
