This citrus salad is easy and pretty!

Peel and slice 1 avocado and 1 orange into rounds. Layer on a plate, alternating. Sprinkle with cilantro and green onion (scallion). For a dressing, drizzle with olive oil and a pinch of sea salt.

About one avocado and one orange per person should do. For a group, multiply the recipe and display on a platter. I sliced the avocados around the middle (not lengthwise as usual) to make nice little circles the size of the orange slices.

Add more or less of an herb sprinkling, according to your taste. Enjoy cold or at room temp!

Hmm, have to say I never cut avocados that way. Thanks for the idea and great photos as always!

  • […] I can’t think of a salad that screams summer more than this one. It’s a lovely and simple way to showcase beautiful produce and a wonderful flavour combination — the citrus acidity against the creamy avocado…delicious! Alright, I had probably better start talking about why I chose these two photos to mash-up. Again, colour is king. Green bag, orange blazer; need I say more? I also thought the geometric cross hatching on the bag, in a way reflected the shapes of the orange and avocado slices. Also, the vertical arrangement or composition of the two images is particularly striking in my opinion. The model on the right has a very elegant lean. Finally, the brown plate/brown heels is also a point of parity. I really like the incorporation of neutral colours to break up the craziness and brightness of those bold summer colours. A pretty good colour blocking effort I think! Get the recipe! […]
